Choosing what type can just depend on what you prefer, but as a guide standard markers are still the favourite either speed or standard both are quicker than the ipad.

 Speed caricatures are best suited to larger events, ipad caricatures have the advantage of a few mediums on the screen/emailed/printed in colour at the venue, and it's modern, but 

ipad digital caricatures will cost you more and will take longer to complete, but look fantastic so take all this into account when you decide.

Sepia caricatures are new and look fantastic done live, but they will take around 10-12 mins so best for selective events.

I can do speed caricatures in 2 mins each one or spend 5-6 min on each caricature, drawing with markers and the ipad pro
